HIGY is a firm with its roots in Alsace, based in Mulhouse since it was started in 1922. Fernand Higy was the company's founder and originated the recipe for Melfor, a unique product on the vinegar market. Melfor, a condiment based of alcohol vinegar, honey and an infusion of plants known since time immemorial has been singularly successful in Eastern France. More than 8 out of 10 homes in Haut-Rhin, Bas-Rhin and Moselle use it regularly.

Why is it so successful ?
Melfor is used like other vinegars. It is the ideal seasoning for salads and crudités and the perfect base for a good vinaigrette dressing. But its success is especially due to its mildly sharp, well balanced taste. Alsace folk know about food and maintain their culinary traditions by passing its use on from generation to generation.
A family company, Higy is run by Bernard and Daniel Higy, the founder's grandsons. It is through their efforts that Melfor is now popular in Paris, the Rhone-Alps region, the South and more recently in Northern France.
